This is for a young gentleman I came across on Twitter. I am happy to share any recipe with a man who is brave enough to be in the kitchen (You don’t need an electric mixer for this one – just a large mixing bowl and a huge spoon).

INGREDIENTS
BROWNIE
- 2 cups flour
- 1½ cups sugar
- ¼ cup cocoa
- 125g butter
- 1 cup water
- ½ cup oil
- 2 eggs
- Half a teaspoon bicarb of soda
- 5ml vanilla
- Half a cup of plain yogurt or buttermilk
CHOCOLATE SAUCE
(Melt butter and sugar in a small pot, add cocoa, vanilla and yogurt, and whisk to form a delicious sauce).
- ¾ cup sugar
- 125g butter
- ¼ cup cocoa
- 5ml vanilla essence
- Half a cup yogurt
METHOD:
- Preheat oven to 180˚C and grease a medium-large non-stick baking tin.
- Sift sugar, flour and cocoa into a large mixing bowl.
- Melt butter (in microwave or on stove) and add the water and oil. Throw into dry ingredients and mix.
- Add eggs one by one, mixing fast (the mixture will be warm and you don’t want your eggs to cook and scramble).
- Add vanilla, bicarb and yogurt.
- Pour mixture into greased baking tin and bake for 20-25 minutes.
- Once done, and while still warm, cut into blocks (inside the baking tin, using a plastic knife) and pour the sauce over.
- Serve with whipped cream or vanilla ice-cream.
TIP: Add roasted flaked almonds when finished or chopped pecans in the brownie batter
